FSSAI

Food Safety and Standards Authority of India — the regulator for food businesses in India.

FSSAI registration is mandatory for any food-related business: restaurants, cloud kitchens, packaged food sellers, dairy, beverage, supplements, even home-baked goods sold commercially. Three categories: Basic (turnover under ₹12L), State License (₹12L–20Cr), Central License (above ₹20Cr or import/export).

The FSSAI license number must appear on packaging, restaurant signage, online listings (Swiggy, Zomato require it), and ecom product pages. Marketplaces will not list food sellers without it. Penalty for non-licensed operation: up to ₹5L plus business closure.

Renewals are 1, 2, or 5 years. Most SMBs forget the renewal date and find their license expired during a Swiggy/Zomato compliance check, leading to listing suspension.

India context

Indian D2C food brands have a complex FSSAI matrix: 1 license per state where you have a manufacturing/storage location, plus packaging-specific labels per product. Cloud kitchens often need multiple state licenses. Marketplace sellers often miss this and have listings suspended mid-festive-season.

  • A Mumbai cloud kitchen needs FSSAI State License + a separate one if they expand to Pune (different state).
  • A homemade pickle seller selling on Amazon needs FSSAI Basic Registration even if turnover is ₹2L.

Do home bakers need FSSAI?

Yes — anyone selling food commercially needs at least Basic Registration, regardless of scale.

What if my license expires?

Listings get suspended on Swiggy/Zomato. Operating without active license can attract penalty + closure. Renew at least 30 days before expiry.
